Menu Plan Monday

This is going to be a pretty low-key week for us. I'm having a difficult time finding any motivation for doing much freezer cooking with a huge pile of post-vacation laundry bearing down on me. I've planned some pretty quick to prepare meals for the beginning of the week so that I can get back on top of everything else at home.


Breakfast
M - Pancakes
T - Chocolate chip muffins
W - Crepes with fresh strawberries
Th - Oatmeal and toast
F - Homemade English muffins w/peanut butter and honey
S - Sausage and cheese omelette
Su - Banana nut pancakes or Breakfast cookies


Lunch
M - Tuna pasta salad, yogurt
T - Turkey and cheese sandwiches, grapes
W - Quesadillas, black bean and corn salad
Th - Egg salad sandwiches, bananas and strawberries
F - Pizza pockets (double batch for freezer), yogurt
S - Homemade hummus and pitas, watermelon
Su - Corned beef, spinach, & wild rice roll-ups

Dinner
M - BBQ meatballs (from freezer), cheesy potatoes, peas
T - Vegetable lasagna w/ white sauce, honey-wheat breadsticks
W - Polish sausage Reuben skillet dinner, easy batter rolls
Th - Blackened chicken, brown rice pilaf, maple-glazed carrots
F - Kids: leftovers, E & K date-night at home: cream cheese rangoon and chicken/veggie wontons
S - Hamburgers, corn on the cob, homemade onion straws w/ spicy dipping sauce
Su - Bruschetta pasta salad, cantaloupe

I just had to tell you that my family has fallen in love with your crepes or as my family called them " those thin pancakes" ..they are now asking for them all the time. Oh and i really liked the chucky veg tomato sauce for spaghetti but my family doesnt like the "chunkiness" so i just put it into the blender after freezing it and they love it! They dont realize it is the same stuff just pureed :) I was going to ask you....what all do you put into your chicken and black bean taco filling....it looks really good!

Looks good- just remember it's more important that it's homemade than processed, even if it's simple!

A Grammatical Disclaimer

I freely admit to consistently using improper grammar in the following areas:
1. I like run-on sentences.
2. I have a tendency to end sentences with a pronoun. (I really do. I can't help it.)
3. I always seem to use passive voice in my sentences. (See?)

I've been trying to break this habit, unsuccessfully, for years, so now I just accept that as my writing style, and since I'm not writing for grades anymore, I embrace it. (Again, see?)
